Easy as . . . Cottage Pie

Cottage pie is the original name of any meat dish with a crust of mashed potatoes.  It was developed as a recipe in the late 1700s when the potato helped stave off famine in Europe.  Today there are several variations, among them Shepherd’s Pie (usually made with beef chunks), St. Stephen’s Day Pie (made with ham and turkey) and Shepherdess Pie (meatless, usually made with soy).  This is my very simple version of Cottage Pie, made with ground beef.

  • 1 lb ground beef
  • 1/2 cup chopped onions
  • 12 oz corn (frozen, canned or fresh)
  • 2 cups mashed potatoes (instant or homemade)
  • 2 cups brown gravy (your own or packaged)
  • Grated cheese of your choice
  1. Brown the ground beef  and onions however you normally prepare it (I add garlic and Montreal Steak Seasoning)
  2. While that is browning, prepare your mashed potatoes
  3. Add the 2 cups gravy to the beef mixture
  4. Add the corn to the beef mixture
  5. After mixing well, spread the beef and corn in a 13 X 9 baking pan
  6. Top the mixture with the mashed potatoes.  Using a pastry bag will give you a prettier casserole, but you can simply spread it out with a spatula or spoon
  7. Sprinkle cheese on the top
  8. Bake for about 15 minutes or until there is a slight crust on the tops of the potato peaks and the cheese is melted

TOLD YA IT WAS EASY!  But oh, so delicious!
